1 tablespoon pumpkin seeds
Directions
Preheat oven to 350 F.
Place pumpkin, plant-based milk, oil, chia seeds, and flax seeds in a big mixing bowl and mix with an electrical mixer for two minutes (or beat by hand with a picket spoon).
Add coconut palm sugar (or brown sugar), all function flour, entire wheat flour, baking soda, salt (optionally available), cinnamon, ginger, and nutmeg, and mix with electrical mixer simply till clean and effectively blended (don’t overmix).
Stir in pumpkin seeds.
Line a loaf pan with parchment paper. Pour batter into parchment-paper lined loaf pan, smoothing to even with a spatula. Sprinkle with 1 tablespoon pumpkin seeds, if desired (optionally available).
Place in oven and bake for about 55-60 minutes, till fork inserted in heart comes out clear.
